Key Lime Pie Crush Cocktail

Every summer, we seem to find a new cocktail that we deem “the cocktail of the summer.” On sweltering days, we find ourselves looking for something light, refreshing, and thirst quenching. Last year, we discovered the key lime pie crush — a bright and citrusy drink that is everything you could want on a hot summer day! 

Key Lime Pie Crush Cocktail

Ingredients:

  • 3 Tbsp. Whipped Vodka

  • 3 Tbsp. Key Lime Juice

  • 3 Tbsp. Simple Syrup (recipe below)

  • ½ Cup Lime Seltzer

  • Ice Cubes

  • Lime Wedges (optional)

Simple Syrup:

  • 1 ½ Tbsp. Water

  • 1 ½ Tbsp. White Granulated Sugar

Directions:

  1. First, you’ll want to make your simple syrup (unless you have store-bought). In a microwave-safe bowl, add water and white granulated sugar.

  2. Microwave the mixture for 30 seconds, remove the bowl from the microwave, and stir until the sugar has been dissolved. Set this mixture aside until it reaches room temperature. Or, you can place it in the fridge to speed up the cooling process.

  3. To make the key lime pie crush cocktail, add a few ice cubes to your glass of choice. We like using a stemless wine glass or a whiskey glass.

  4. Measure out and add the whipped vodka, key lime juice, and simple syrup to your glass of ice. Stir the mixture.

  5. Next, add the lime seltzer, and stir slightly.

  6. Add a lime wedge to the side of your glass, and top the drink with a sprig of mint. Both are optional.

This key lime pie crush cocktail recipe makes one cocktail, but you can double or triple it to share with others!
