Summer/Spring Strawberry Salad with Strawberry Honey Poppy Seed Vinaigrette

Strawberry season is the best season. There’s truly nothing like local, fresh, juicy, ripe strawberries that are sweet and the perfect shade of ruby red. In Lancaster County, Pennsylvania, we are blessed to have local strawberries at our fingertips in late May and, if we are lucky enough, through the beginning of July. In our homes, we embrace every day of strawberry season—from making strawberry shortcake to homemade strawberry ice cream. If there’s a way to incorporate these sweet red berries into our meals or desserts, we take full advantage of it! Whether you’re scooping up baskets of local strawberries at a roadside stand, picking them yourself from a patch, or opting for berries from the grocery store, we have some sweet recipes for you! Embrace the first signs of early spring/early summer with our spring strawberry salad with strawberry honey poppy seed vinaigrette!
Strawberry Salad with Strawberry Honey Poppy Seed Vinaigrette
Salad Ingredients:
(1) 5-7 Oz. Bag of Mixed Greens
¼ Cup Crumbled Feta Cheese
1 Cup Sliced Strawberries
1 Cup Drained Mandarin Orange Segments
⅓ Cup Chopped Candied/Praline Pecans
Strawberry Honey Poppy Seed Vinaigrette Ingredients:
1 Cup Chopped Strawberries
2 Tbsp. Honey
2 Tbsp. Apricot White Balsamic Vinegar (or any other fruit white balsamic vinegar or plain white balsamic vinegar)
3 Tbsp. Canola Oil
¼ Tsp. Poppy Seeds
Pinch of Salt & Pepper
Vinaigrette Instructions:
To make the strawberry honey poppy seed vinaigrette for the spring strawberry salad, add the chopped strawberries, honey, apricot white balsamic vinegar, canola oil, and salt and pepper to a blender or food processor. If you have an immersion blender, you can add all of your ingredients to a bowl.
Blend all of the ingredients until your vinaigrette is smooth.
After the vinaigrette is well blended, stir in the poppy seeds by hand.
Set the strawberry vinaigrette aside and assemble the salad.
Salad Instructions:
To make the spring strawberry salad, grab your serving platter and add a heaping pile of mixed greens.
Next, sprinkle over the crumbled feta cheese and then scatter the sliced strawberries and drained mandarin oranges over your greens.
Sprinkle the chopped candied/praline pecans across.
If serving immediately, drizzle the strawberry honey poppy seed vinaigrette lightly across the salad with extra vinaigrette on the side. Or, you can dress your individual portion of salad on your plate.
